1.Crawfish etoufee
2.crawfish boudin, pork is good too
3.jumbalaya
4.okra gumbo
5.corn mashou

My inlaws are cajun. Awesome stuff. We go to a variety of restaurants but rarely are impressed with their cajun offerings. In Tulsa, Copelands is the only recommendation. Hebert's on 71st is good for a meat shop. Not sure if they have dine in yet though they had indoor tables set up for Crawfest this weekend.

Check out Legnon's shop in Baton Rouge, it's owned and ran by my father-in-laws cousin. Great cracklin, boudin, and everything else.

Yes, we immigrated from France via....gasp!...Canada.

Some of my favorite cajun food:

Gumbo (filet or okra)
Fried alligator tail
jumbalaya
shrimp etoufee
po boys (catfish or shrimp. Sometimes chicken)
duck
turtle soup
pig tail spaghetti

the list goes on and on....

My favorite cajun feast is easily the crawfish boil. You basically put a bunch of picnic tables together and spread some newspaper out. Then they come by with the crawfish pot and spread it all over the table. The crawfish pot usually contains red potatoes and corn to go along with the crawfish. Then they come by with a big 'ol vat of industrial strength hot sauce and drizzle it over everything. Everybody just digs in and throws the discarded shells into a predetermined bucket.
I've eaten everything on your list. It's all good except CRAWFISH. You can keep them!!!!!!!!

I'll have to check it out the next time I'm on my way to New Orleans. My favorite place to stop in Baton Rouge is Drusillas. Best shrimp I've ever had!
