You can pick a from a combination of different countries from the ancient world.

My army would be 40% legionary infantry, 15% cataphracts, 10% horse archers, 20% archer+spearmen units, 15% elephants and light infantry/cavalry.

Well, the best ancient army ever would probably be the ultimate evolution of ancient armies: the Roman legions of the 1st century. So pick one brilliant general, such as Hannibal and give him 10 1st century Roman legions and se what he can do.

Hannibal would want far more cavalry than what a legion had with it.

Take Cretan archers, Roman engineers, Parthian cataphracts, Germanic shock troops, Macedonian phalangites, Roman legionaries, Hunnic mounted archers for light cavalry support, Homer and the bard who created Beowulf for moral support, Roman and Indian surgeons, Roman logistics units, Ptolemaic polyremes if naval warfare is involved, and finally Indian elephants to scare enemies. To command this army, Hannibal Barca would be the overall commander, with Germanicus controlling logistics (due to his application of logistics in his German campaigns), Belisarius to command the troops (given his use of little resources to conquer areas), and a Carthaginian admiral for the navy.
