Mongol Administeration of Conquered Territories

How was this normally set up? What was the structure? Did they tax their subjects? Did the nomadic style conflict with administering urban populations?

The Yuan divided China into provinces and adopted a Chinese style bureaucracy, although they employed more foreigners in their government. Their nomadic lifestyle did in fact conflict with their attempts to rule, as the Yuan emperors after Kublai had short lifespans. The Yuan lasted only 97 years but they had 16 emperors. The Ming also had 16 emperors but lasted 276 years.
