A particular interest of mine, but I'm curious as to what everyone else would say, personally I'd go for Henry V, brilliant leader, general, and even a good politician back home.

Henry II, the first Plantagenet King. An intelligent, able and effective King who restored order after Stephen's somewhat disastrous/chaotic reign.

I just so happen to be a researcher of Henry V...but I don't think you will like my version. There is a lot of circumstantial evidence that connects his family to Lollardy. I wouldn't say he was a supporter, but its possible he was tolerant of it...at least until it became seditious.
