How much of those fortifications pictures are original? How much was added onto or changed? I'm highly curious as to the actual look and feel of a Byzantine fort. I'm looking to write another Historical fiction set in Byzantium. Also, did their fortifications change over time?

Its a little bit difficult to find castles that have no later additions since after they were conquered they were enforced and changed by the conquerors, be them Franks, Venetians or Ottomans.
Well the Ouranoupolis tower, the Athos Karakallou monastery and tower, Arta's castle are the more typically byzantine, while other such as the Bοurtzi in Nafplion, and the Platamon in Macedonia are mainly Venetian, or the castle town of Rhodes was built by the Hospitallers knights.

The castle of Patras, is mainly byzantine built, with part of the ancient acropolis fort, with later frankish, venetian and ottoman additions.
