Did the various Caliphates apply certain flags / "coat-of-arms", and if yes, then which?
I am thinking primarily about the following Caliphates:
Rashidun
Umayyad
Abbasid
Were they really simple single color without symbolism? If then which color did each of the Caliphates above use?

The 'Abbasids used an all-black flag.

Yes it was plain colours only. The Pan arab colours of today derive from the various Arab/Muslim dynasties. Green for Fatimids, Black for Rashidun, White for Ummayad and Red for Khariji.
As for specific emblems/symbols, there is the "eagle of Saladin" that Egypt uses on its flag. The "Lion and Sun" symbol has been used by various Persian dynasties(Qajars, Pahlavis) and other Persian influenced dynasties (Mughals)
