Animals of the eastern Great Plains, circa 1880s.

Hey, so I'm doing a bit of research for my book, and I'm trying to figure out what kind of animals a man would be able to hunt around Eastern Missouri, the Hannibal area to be specific. I reckon most of it would be plains, so you'd have to be mighty lucky to find a deer. Pronghorns were further west. Bison wouldn't be found anywhere near here. I'm guessing if a man had to, they could also kill a cow and hope the rancher didn't realize. Any other ideas?
