Wasn't there an intermediate period where mail was supplemented by things like brigandines and coats of plates before full plate harness came around?
Coats of plates were the precursor to both solid plate cuirassses and to brigandines. They are divergent evolutionary branches. Brigandine and plate harness evolved concurrently.

I would proffer brigandines were the widespread default, not plate.

but plate had to be individually fitted, lamellar and brigandine can basically be worn like shirts and was probably easier to fix

also it was mentioned that if brigadine was more expensive why would the men at arms who rank lower than knights usually wear it

Well, knights were probably not wearing the "munitions plate", men-at-arms and archers would be. Knights might go with fancier plate or plate and mail in earlier periods.
