Northern Italians use butter; southern Italians olive oil.

Ancient Romans and Greeks used olive oil for everything. They ate it, cooked with it, rubbed their bodies with it . .
Traditional Northern recipes use butter but nowadays we use also olive oil, which is nowadays staple of most dishes (and it is worth spending more for good extra Virgin olive oil). Also we definitely eat bread with olive oil, especially roasted bread).
