Apart from the Big three/Commonwealth independent states, like Canada, South Africa, Australia and New Zealand and China? I know of Brazil and Mexico, but did Cuba participate? what was the status of Thailand?

Holland, Norway.... Didn't even Argentina declare war after such declarations were no longer needed? Newfoundland wasn't a part of Canada then...

Yes Argentina declared war to the Axis in March 27, 1945.
Argentine historian Norberto Galasso, wrote that, the broking of relations with the Axis in 1944 and the declaration of war in 45, Argentina made with the intention to avoid a attack from Brasil, because from 42 to 44 when Brasil entered the war, Argentina had deployed troops to the borders with even small border clash, no one know why they did that but Brazilian high command tough that it was threat and Buenos Aires feared that with the allies winning Brasil wanted payback.
