How new world crop changed the cuisine across the world

We all know some of the long lasting effect of new world crops like potato, tomato, corn and beans. Chilli replaced black pepper corn.

The Inca Indians in Peru were the first to cultivate potatoes around 8,000 BC to 5,000 B.C. In 1536 Spanish Conquistadors conquered Peru, discovered the flavors of the potato, and carried them to Europe. Sir Walter Raleigh introduced potatoes to Ireland in 1589 on the 40,000 acres of land near Cork.

it goes further than that , the rise of Prussia and Russia was mightily helped by having the potatoes as staple crop
it made poor , cold and wet lands much more productive , the increase in population translated in a greater conscription base
in the case of Ireland it too led to a demographic increase

Maize also increased farms production ,while tobacco became a godsend for taxation purpose

This wasn't just one way , south America got chicken , wheat , horses and cattle among others

'Italian' food in the USA heavily features tomato sauce.
not sure how much it's used in Italy.

hard to imagine Spanish cuisine without peppers
hot peppers are also a big part of Asian and African cuisines

fried potatoes are a major dish in Holland, and the British Isles feature mash with bangers and chips with fish

squash and chilli peppers brought some variety too

....even in China they took to it with relish , with 22% of the world production it is the biggest producer
Northern China is potatoes country , all the big cities fell in love with the Belgian contribution to the world ...chips
