100 mongol archers against 100 Teutonic knights. The mongols are equipped with chainmail, scale armor, spears, bows and scimitars. The knights have plate armor, lances, war hammers and broadswords

Knights, with equal numbers they would mow down the mongols.
how so? the mongols are quite a bit quicker and swifter, and can shoot down a knight with a bow. It's like a longbowman (just that good at aiming) on horseback. Yes they didnt use longbows but they were just as effective cause thats how they were raised. I wouldnt say they were better tehn longbowmen seeing as longbowmen trained for sometimes decades.

The longbow did it when the knights were in a quagmire and unable to move.

The mongols wouldn't be able to shoot down enough before being caught up with once there were sufficient numbers of knights and were well led.

Also the heavy armour the knights used was not easily pierced and would need multiple hits thereby giving the knights ample opportunity to cut them down, otherwise they (the mongols) could opt to flee.

As for piercing, from what I have heard it wasn't easy if at all. They only ever defeated small numbers of knights by tiring them out and isolating them and attacking them in numbers with their own cavalry as well as archers.

During the crusades the Turks used similar bows. These were little more than a niusance as the arrows caught in the folds of the crusaders' jerkins, leaving the wearer unharmed
