Are these the most common words soldiers throughout history have spoken when they've been shot/stabbed and are dying?

Well...The thing about death and I might be wrong is that you realize you could have done so much more. And when you're dying, you want to ensure your loved ones know they were loved. So, I don't see why that wouldn't be a big line for soldiers to say when dying.

It probably was. I'd be interested in seeing when this phrase came out. Did Roman Legions speak these words? Or is it more of Hollywood invention?

Bear in mind that most soldiers who go to war are unmarried and rather young. Screaming for one's mother is probably more common than uttering, "Tell my wife"
