Why don't we talk about her? Or her life? She was great. She loved her children and her husband, and was lady in waiting for a Lancaster queen and then her daughter become a York Queen.

Probably for the same reason we don't talk about Henry VII's father, Edmund (or his mother, either).

She wasn't diredtly married to any of the kings, and the War of Roses period is full of personalities to keep track of, and while maybe important, probably less so than many others.

And of course there were those pesky witchcraft allegations made against her shortly after the execution of her second husband, Richard Woodville, in 1470.
